When I was giving the chance a few weeks ago thanks to
Smiley360.com and Pompeian to sample a new product called Pompeian Grapeseed
Oil Spray I couldn't wait to give it a workout with some of my holiday candy making.
I first learned Pompeian Grapeseed Oil (Pompeian is on Facebook) is an all natural cooking spray that is imported from France. It is a rich source of Vitamin E and antioxidants. So I decided to use a mist of Pompeian Grapeseed Oil on my pans I use to make my homemade peanut brittle and see if it would work under such hot and sticky conditons.
Ingredients:
2 cups granulated white sugar
1 cup white syrup (corn syrup)
1 scant cup water
2 cups raw peanuts
2 teaspoons of baking soda
2 Tablespoons of unsalted butter - I cut the butter up in cubes to help it incorporate quicker.
1 teaspoon salt
Directions:
Boil first 3 ingredients over medium heat to soft ball stage.
Add peanuts.
Cook until light brown (hard crack), stirring constantly.
Remove from heat and continue to stir while adding add baking soda, salt and butter.
Do not over stir the baking soda/salt and butter in, otherwise you will knock all of the air bubbles out of the brittle and it will be hard. |
Pour out onto 2 Pompeian Grapeseed oil Spray coated cookie sheets - DO NOT STRETCH OUT!!!

Woot!! Thank you for the recipe and sharing your thoughts on the Pompeian Grapeseed Oil Spray, I have never made Peanut Brittle before, always been afraid it would not turn out. I will be giving both of these a try, so much cheaper then buying it for our large family.

ReplyDeleteI have never tried to make any kind of candy...You make it look so easy, though, and I have Pompeian Grapeseed Oil spray on hand, so maybe I will try it this week!
