What does Olive Oil make you think of?
Okay here is another question...Does Olive Oil make you think of sweet or savory recipes?
I think most of us think of savory recipes. Which makes my mouth start drooling when I think about my homemade clams and noodles. They are full of garlic, olive oil, clams and long noodle. Yum!
But one of my favorite recipes that uses a lot of Olive Oil is my Morning Glory Muffins. I was so thankful years ago when I found this recipe on Allrecipes.com and then made it my own with a few adjustments.
Like I said my Morning Glory Muffin uses a lot of Olive Oil. And if you have cooked/baked with olive oil in the past, I think you realize how important it is to select the right type and brand to make your recipes come to life.
One of my new favorites is Pompeian Extra Virgin Olive Olive.
And when I received my free kit, I knew exactly what recipe I was going to create!

Morning Glory Muffins
Ingredients:
1 cup all-purpose and 1 cup wheat flour
1 1/4 cups white sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon nutmeg
1/4 teaspoon salt
2 cups shredded carrots
1/2 cup raisins or Currents (I love the tartness Currents add)
1/2 cup chopped walnuts
1/2 cup sweetened flaked coconut
1 apple - peeled, cored and shredded
3 eggs
1 cup Pompeian Extra Virgin Olive Oil
2 teaspoons vanilla extract
Directions:
Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
In a large bowl, mix together flours, sugar, baking soda, cinnamon, nutmeg and salt.
Stir in the carrot, raisins (currents), nuts, coconut, and apple.
In a separate bowl, beat together eggs, Pompeian Extra Virgin Olive Oil, and vanilla.
Stir egg/olive oil/vanilla mixture into the carrot/flour mixture, until moistened.
Scoop batter into prepared muffin cups (I like to use a cookie scoop as it makes it much easier and cleaner filling the cups).
Bake in preheated oven for 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

I know olive oil is a healthier choice but there's something in it that I don't like, the smell.
