I am pleased to announce I have been selected by Simply Potatoes to participate in the Simply Potatoes Family Food Menu Campaign. Simply Potatoes supplied me with two free coupons to use to help me prepare a weekly dinner menu. And they are going to provide one of my followers a coupon of their own to get creative. **Enter for your chance to win below**
Of course....I had to come up with a new recipe to use Simply Potatoes, which by the way are so tasty and fresh without the hassle of peeling, slicing or dicing. I decide to try making a old family favorite, but a lot simpler and time saving thanks to Simply Potatoes. I made a Simply Easy Hot German Potato Salad - which was a perfect addition to my crock-pot feather bone ribs.
Ingredients:
8 bacon strips (Pre-cooked - speeds up the cooking time), crumbled
3/4 cups diced onions
1 (20 ounce) package Simply Potatoes Fresh hash browns
2 Tablespoons All-purpose flour
2/3 cup white vinegar
1 cup water
1/8 cup granulated sugar
Dried Parsley
Salt and Pepper to Taste
Directions:
Place bacon in a skillet. Fry until bacon is crisp. Remove bacon slices and drain on paper towels. Crumble when cooled.
Add onions to the drippings in the skillet and cook until onions are translucent. Add flour and stir until combined.
Add the vinegar, water and salt and pepper to taste. Bring to a boil, until mixture thickens slightly. Add crumbled bacon and stir.
Add Simply Potatoes Hash Browns and stir.
Continue to cook over low heat for 10 minutes. Add dried parsley before serving warm.
I am so glad Simply Potatoes motivated me to come up with this new Easy Family Favorite. I will definitely be making this again and again.
