Leftover Turkey Recipe Called "Delicious" Thanks Allens Veggies

Here is my monthly blog post for Allens Veggies - along with a new recipe I came up with to use up some Leftover Turkey.....  Enjoy!

I am so thankful this year for my health (being Cancer-free, but still healing from knee surgery) and my wonderful family. I live each and every day to the fullest hoping to make a difference in this busy world. Don’t forget to take time before 2010 is over and we all ring in 2011 – to remember what you are thankful for. Who has made a difference in your life? Have you told them lately? What are you going to do to try to leave a positive mark on society today, tomorrow and in the years to come?


Don’t forget with the hustle and bustle of the holiday season to make sure you are eating healthy and getting the necessary servings of fruits and vegetables. There are always different ways you can incorporate this items into meals and especially leftovers.

I made up a new recipe for our turkey leftovers this year from Thanksgiving. My family loved it, including my 3 young boys. I think I may try this recipe out with our ham leftovers – I am certain we will have from Christmas.

Here is my recipe – I am not sure what I should call it, other than delicious! Anyone have any suggestions? My 5 year old son kept asking while he was eating it – if he was going to be strong like “Popeye”.

Ingredients:

10 slices bacon – baked crisp and crumbled

1 large onion - chopped

½ cup chopped onion

3 cups cooked rice (I like ½ brown rice and ½ white rice)

1 can Allens Popeye’s Spinach Drained

¾ teaspoon celery salt

1 can (10 ¾ oz) condensed cream of mushroom soup

1 can (10 ¾ oz) condensed cream of celery soup

¾ cup Sour Cream

Enough sliced turkey leftovers for 9 people – can also dice the turkey

½ cup dry bread crumbs

1 Tablespoon melted butter



Directions:

Preheat oven to 350 degrees.

Cook bacon until crisp in a pan. Remove bacon from pan and place of paper towels. Save 3 tablespoons of the drippings and saut̩ the 1 large chopped onion and celery salt Рuntil tender.

Combine rice, bacon, cooked onion mixture, ½ cup raw onion and spinach. Combine the condensed cream of soups and sour cream. Next stir half of the mixture into the rice and vegetable combination.



Spoon the rice and vegetable mixture into a lightly greased 9 X 12-inch baking pan.

Place the turkey over the rice and vegetable mixture.



Spoon the remaining soup and sour cream mixture over the turkey.

Toss the bread crumbs with the melted butter and sprinkle around the edge of the pan.



Place in preheated oven for 30 to 35 minutes, until browned around the edges.

  1. My kids are always excited about leftover turkey meat every year since I always cook a different recipe with it. Last year I cooked a turkey pizza, made some sandwiches and a pot pie with our left over turkey meat as for this year I think I will try this recipe of yours.
